As with many of us we have had the dream of owning and operating a restaurant sharing the food we love. I have had that dream for years. After retirement and moving to Omaha I took steps to realize that dream in the form of a food truck. Did all the research, costed out my recipes and ran the numbers finding the food truck was doable. We began moving in that direction.
I realize a part was missing: a deeper culinary knowledge base so I enrolled at Metro Community College for culinary arts in 2020. One of the best things I did! Had so much fun learning the various techniques in savory and sweets cooking. Met some great aspiring chefs/bakers and Chef instructors. Would do it again in a heartbeat!
The food truck plan was working as defined until Covid hit me and my wife. The sickest we’ve ever been making me withdraw from school. After recovery we talked about continuing the food truck dream, deciding to go in another direction, travel. We bought an RV and began our journeys. Meanwhile I continued baking and cooking, enjoying making others happy about their meals and desserts.
As time marched on I still had the urge to make food for sale. Every day the desire was recognizably present. It was as if I was drawn to the idea like a magnet. To help alleviate the desire I volunteered with Cake4Kids. It was a great choice as I could choose when I could bake and the product plus it enabled me to be of service to others.
Ultimately participating with Cake4Kids gave me the courage to do more (they didn’t fire me for lousy food). That combined with the insatiable desire to open a “restaurant” resulted in a partnership with my bride to form Papa Jack’s Treats! And, as they say, “The rest is history”.
To be brief, we are working under the Nebraska Cottage Laws, are insured, registered with the State of Nebraska, have a business license, and have a SERV Safe Certificate earned at MCC. We participate in Farmers Markets, Craft Fairs, local events, and prepare baked goods for direct sale to our customers. We do not skimp on ingredients as one of the tenets of the MCC Culinary Arts Introduction Class is to “buy the best ingredients one can afford”. Every baked good is fresh and never frozen and has the bake date on it along with all the ingredients.
